So the spring has finally arrived to Dalmatia and it's perfect weather to spend some time doing outdoor activities. One of the first foods that signals the start of spring is the appearance of fresh asparagus. They grow almost everywhere along the coast.
At first it seems hard to spot them, but like with everything else, once you learn a few tricks of the trade, you’ll start collecting them like crazy. Asparagus grows in the fields and forests and prefers bushes. They are always found next to the small bushes with needle-like “leaves” which are actually old plants of asparagus.
Foraging for wild asparagus is our favorite spring activity here in Croatia which you can easily combine with hiking and geocaching. Immagine spending a day walking through beautiful nature and bringing home extremely healthy dinner.
The fleshy green spears of asparagus are both succulent and tender and have been considered a delicacy since ancient times. Not only asparagus is delicious, it's also packed with health benefits: it’s loaded with nutrients, it can help fight cancer,it's packed with antioxidants, asparagus is a brain booster and it's a natural diuretic.
The most common way in Dalmatia to enjoy the asparagus is to cook it and serve it with hard boiled eggs – adding a touch of vinegar and lots of olive oil will enhance the taste. It is also very popular to prepare them in fritata or different kinds of risotto.
